White tea was originally drunk by the upper class in China for many centuries and has only recently been introduced to the western world. Today, everyone from medical researchers to chefs are praising the mild, smooth flavour of White Tea and its associated health benefits including the presence of high levels of antioxidants.
White Tea, like many known Teas, is made from the Camellia sinensis plant. However, White Tea is only produced using young teas leaves which are only picked just before the buds have fully matured. The name is derived from the silvery-white hairs that appear on the unopened buds of the tea plant, resulting in a whitish appearance to the tea plant. White Tea has a distinctive flavour which is partially due to the preparation process involving a withering period in natural sunlight which prevents further fermentation of the tea leaves and avoids oxidation.
White Tea provides a plethora of health benefits to the consumer including lowering blood pressure and cholesterol as well as reducing the chance of suffering from a heart attack. These health benefits are thought to be due to the presence of polyphenols and catechins.
